Icing Recipes

No cake is complete without icing. We have great recipes for icing that you can use on cake, cupcakes, cookies and other baked goods, to take the flavor up another notch. Give our Royal Icing recipe a try or use a more understated frosting to practice your decorating skills. Whatever you’re baking, we’ve got the right frosting recipe.

 
Royal Icing using Meringue Powder
 
Yields: Approx. 3 Cups
 
Ingredients:
4 Cups Powdered Sugar
3 Tbsp Meringue Powder
1/2 Tsp Extract or Flavoring
of your choice
1/2-3/4 Cup Warm Water
(until you reach thickness of your choice)
 
Directions:
Step 1: Mix powdered sugar and meringue powder in a
large bowl until well combined.
 
Step 2: Add water. Beat on medium to high speed until very
glossy and stiff peaks form. (Approx. 5-7 Minutes)
 
To Cover or Flood: Proper consistency is when you lift beater
of mixer, ribbon of icing that falls back into the bowl remains
on the surface of icing before disappearing.
 
*If necessary, to get the right consistency, add more powdered
sugar (to make thicker) or water (to make thinner)*
 
**Icing needs to be used immediately or transferred to an airtight
container as royal icing hardens when exposed to air. Cover with
plastic wrap when not in use.**

Brite White Icing / Altered Consistency Icing
 
Yields Approximately 3.5 lbs.
 
Ingredients:
1 Pound powdered sugar
3/4 cup High Ratio Shortening
1/2 tsp Butter Vanilla Flavoring
1/2 Cup Brite White
1 TBS Meringue Powder*
/ -Thin- 6 tbsp
                                                                      Water----<-Medium- 10 tsp
\ -Stiff- 7-8 tsp
 
Directions:
Add water gradually to 1 pound powdered sugar. Mix
until smooth, scrape side of bowl often. Add flavoring
and mix well. Add shortening, mix again, scraping bowl
often. Add Brite White and mix for at least 5 minutes.

*Substitute Powdered Coffee Creamer if 
Meringue Powder is unavailable
